Francois spent twelve years at Hotel du Vin working from Commis Sommelier to Head Sommelier under the likes of Gerard Basset, Robin Hutson & Ronan Sayburn before leaving to rejoin Robin at The Pig group of Hotels.

Tony cites Francois as an inspirational figure in his own wine journey from their time working together at Hotel du Vin Birmingham.
